Lemon Squares with Nestlé Yogurt

When I saw that I have to cook with yogurt, immediately I thought of something zesty and tangy. I love love love lemons if you do not know by now and I was busy looking for recipes for lemon and yogurt, both of which I major love.

I found this recipe online and I love that it incorporate both lemon and yogurt and also cause it will bring me back the taste of the fudge I fell deeply in love for when I went to NZ few years back.

Nestlé's yogurt is one of the yogurt I take on a regular basis whether for cooking or just direct consumption. I love adding yogurt into dishes especially cakes because of the extra tanginess. I even use them for dips.

Anyway, back to my Lemon Squares. Below is the recipe.

This recipe should give you 16 squares. Else you can cut smaller squares and have more pieces. I love to have them small so that I can eat two. Although I will eat two even if they are big squares =x

Ingredients:
1 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup margarine, softened
2 tablespoons Nestlé low-fat plain yogurt

Topping:
 3/4 cup sugar
2 tablespoons flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
1 egg white
1 lemon rind, grated
1/4 cup lemon juice
2 teaspoons icing sugar

Method:
1. First, combine flour, sugar, margarine and yogurt in food processor or blender. I used my Thermomix for this.
 2. Pour the mixture into a lightly-greased 8-inch-square cake pan. Press evenly.
3. Bake at 325 for 25 minutes or until golden.
4. For the topping: Combine sugar, flour, baking powder, salt, egg, egg white and lemon juice and rind in a food processor or bowl.
5 Mix well.
6 Pour topping over base and bake an additional 35 minutes or until top is set. Sift icing sugar over top when cool.

Love the base because I added this. Smells super awesome! I could just eat the raw crumb! Although I don’t think it will taste nice cause it is flour but the butter and the Nestlé Yogurt makes it smell so good!

 OMG I LOVE LEMON + YOGURT. Love the base although I would put MORE Nestlé yogurt if I were to do it again but I love yogurt + lemon. Gimme moar! In fact I think I am going to try few more dishes with Nestlé yogurt!

Counting my blessings


Was eating my diet meal (consisting of lots of vege and some chicken breast) when my little grandmother sat beside me.

"Eh, no eat rice ar?"
"No, today eat chicken and vege"
"Why no eat rice?"
"Heee..don't want to eat rice."
"Eh, yesterday you cook that pork, very nice lo."
"Is it? You like it ar?"
"Ya...the taste just right. Sometimes when we buy outside not so nice one."
"Ya lo, this one we cook ourselves ma, so we can cook the way we want it lo."
"Ya, very nice. I eat that one only enough already."
"Like that I cook for you some more okay?"



I am going to count the little blessings every day. This is the 3rd time my grandmother praises my cooking with Thermomix.

First was Fried Bee Hoon.

Second was Sambal Dried Shrimp. My aunt told me that my grandmother keep saying it is nice.


Today she praised me of my Dark Soy Sauce Pork Belly (which really is Char Siew without garlic and shallots cause I was too lazy to marinate them the day before but she loves it !)






If you know my grandmother enough, you would know that she is a VERY (very is an understatement) fussy eater. So those who wonder can Thermomix cook what we cook daily and make it good? My answer is, it can cook EVEN BETTER! Cause it's not only tasty (approved by a fussy grandmother), it is HEALTHY with less oil and it is EXTREMELY EASY with no need of spring cleaning after cooking even after cooking Sambal Dried Shrimp which was IMPOSSIBLE before this.

Looks like I've got to cook more stuff for my grandmother with Thermomix so that she can have good meals every day. Besides, it requires little effort. Our little naughty grandmother sometimes refuse to eat cause the taste is not up to her liking. So it's a blessing for me to be able to cook for her and make sure she eats well. Motivated to cook even more!

Recipe?

If you don't know by now, I now only cook with Thermomix. In fact it has been a while since I last touch the knob on the stove. And it has been a while since I last had to stand for at least an hour to cook lunch or dinner. And if you don't know how it looks like. It's the super canggih machine below. I make my own snacks too
So healthy eating is taken care of. And we spend so much lesser on food as we eat in most of the time. We only go out for meals occasionally but having to pay RM3-5 per person for a meal hurts. And those are just coffee shop stuff. If we opt for restaurants, we would probably spend a month's worth of the money we use if we eat in.

These are the normal stuff that I cook daily. I managed to get some fresh prawns and fish fillet from home (sponsored by the mother). We cooked lesser as we had lunch outside with my mother. It was so easy to cook with Thermomix as we just throw the things in, set timer and off we go to online or in my case, watch my PLL. I am waiting for episode 2.

I posted a picture and someone (who is also using Thermomix) is asking for recipe for my humble humble dish over here. /shy I will work it out and share. It's really what we eat daily. Try to spice things up a little for the boyfriend but he is having bad tummy these few days (since Sunday) so we try to go light on everything we eat. The assam prawns was without oil. I didn't put any oil in it cause that's how we both like it.

Roasted Chicken with Onions and Potatoes

Was feeling a little under the weather so I was not keen in cooking too elaborately in the kitchen, even with Thermomix. I needed the rest more. So we got a whole leg for the boyfie and the thigh part for myself from the market. We asked the guy to deboned it for us.

I cleaned up the chicken a little and started marinating them.

10g Olive oil
a pinch of salt
a pinch of pepper
a dash of mixed spices

I mixed the these up and then pour them over my chicken. Rubbed it in. Then I took one potato (for the carbs) and washed it thoroughly to make sure there is no more sand left on the skin. Roughly cubed them, threw into the marinated chicken. Wedged the onions, threw it in as well.

Put them in the fridge and got the boyfriend to bake them when he wants to eat it. I on the other hand, went to bed for a nap.

Woke up to this.


I am not sure how long he baked them but you can bake them at 180 degrees for 25-30 minutes? Make sure when you poke it, there's no more pink blood gushing out. But I think if you debone it, it is easier to cook? I don't know.

If you know me well, I did these without following any recipes cause I'm lazy like that. =P But it turns out good!

Thermomix Fever!!

I have been using Thermomix for 8 months now and when you feel lazy to cook, it's great to see so many of your friends cooking with Thermomix and make such wonderful things that you want to do it too. Maybe cause I kiasu.

Anyway, suddenly I have several friends messaging me and contacting me to enquire about Thermomix as tomorrow is the last day before the price hike. I get messages from the most unexpected people!!!
***One moment you are up, the next you are down. Looks like I shouldn't count my eggs.***

Tomorrow I will talk to one of them. I can't wait to have more friends using Thermomix so that we can encourage one another to eat healthier, cook more, eat out less and at the same time, have more fun with family through cooking.

I/The boyfriend usually make the daily dishes on our own since the other would be busy doing work. But when it comes to making dessert or other fun stuff, we would always do it together cause we are both excited to see the outcome. I think cooking should be like this!

Food I've attempted to cook

I find myself quite impressive..if I were to go overseas, I think I can survive...now time to get some local delicacies recipe into my recipe file..
Made tortilla wraps. Slightly thicker as we did not roll it out thinly.

Suddenly had the urge to make Lemon Yogurt Cupcake and went out to buy yogurt and lemon. Taste wise is okay but slightly dense. I am not sure if it's cause I overmixed it or if it's cause I anyhow dump two bottles of yogurt though recipe ask for 250ml. =P Mine total was 280ml.

Made Muar Chee. Gave Jen Jen the recipe and she made it too. Mad proud of myself.
Made Christmas cookies. Did not manage to make to give out as I was so busy!!!!   



  Basically these are what I've made, I think I have more but yea...overall, I made quite a bit of stuff with Thermomix. Kinda fun. Things I would not have done otherwise. Boyfriend is baking more bread too. Love him for his enthusiasm in cooking with me. And his ability to finish up the food. What's the point of cooking if you can't finish it right? Also, we need to start thinking about sharing =P
